The Chinese and Japanese have enjoyed tea for its intrinsic health benefits for treating and preventing different ailments for many centuries. The benefits are due to powerful anti-oxidant catechins which are present in the tea plant Camilla Sinensis.
All tea come from this plant, but how the leaves are picked and processed determines whether it becomes White, Green, or Black Tea. The younger the leaf is plucked, and the less processing it undergoes, determines the higher level of anti-oxidants it retains.
What is the main difference between Green and Black Tea?
Green Tea which is made when the tea leaf is picked when it is young and it undergoes very little processing and is unfermented. Black Tea is made when the leaf is picked when it is older and then fermented by exposing the crushed leaves to the air and they are allowed to oxidize.
